Happy Easter!

To my reader friends and those who drop by on occasion.  I know the modern thing is to refer to this as Resurrection Sunday - it's the reason for the season after all - but the old fashioned greeting is still OK by this old guy. 


Enjoy your day.  Enjoy your families.  We have nothing in the smoker because the forecast is for rain and wind and those three words don't go together.  However you celebrate, enjoy your day.

For next year or next time, I've found that slow cooking a pork butt or shoulder (6-8lbs worth) with about a cup of good BBQ sauce, a cup of brown sugar and a cup of water for 4-6 hours on high and then 6 hours or more on low makes the most succulant pulled pork for bbq sammiches. Yes, it's not smoked, or slow roasted, but, dang, it's tasty. And can be done in inclement weather conditions as long as you have power.

    One of the 'joys' of apartment living is finding workarounds.

    Or you can get an electric smoker and build a plywood wind shield (basically a 4 sided box with one side moveable for to access the smoker) out of 4 4x4 panels and some hinges, heck, hinge the whole thing and have the hinge pins removed and replaced with really big diameter nails. That way you can set it up on a covered porch to protect it from the rain.

    1. I will second Beans method because we use it often when we are going to have a few guests over to eat. Great on sammiches and as pulled pork tacos. For the latter, if you add some pineapple juice (or chunks) to the cooking liquids it becomes "al pastor". Also, a bunch of liquid smoke makes it almost like it came from the smoker.

    A Blessed and Holy Easter to you and yours SiG. I have a tri-tip roast (California BBQ) out smoking on the charcoal grill here in the Bandera area. It is getting hit with a little bit of hickory, mesquite and oak in the smoke.

    I have gotten back to blogging after a long hiatus. My take on today over at my place "Thoughts from the Last Frontier in Bandera". Yes, a shameless plug for me, but I do need to broadcast it somehow.
